Where do your cheeses come from?

We are importing our cheeses from France from where most of our selection originates but we also offer cheeses from many other European countries.

 

Can I get customised cheese trays online?

Yes, it is very easy. Shop through our website and pick the cheeses you like, at the end of the check-out process choose the cheese tray option. For special instructions, if any, leave your comment in the comments text box.

 

What should be the serving size per person?

Depending on the occasion we would recommend the following:

End of a meal - Cheese platter:

75 to 125gr

/per person

Cheese Tasting:

20 to 25gr

/per cheese & per person

Cheese as a Cocktail item:

25 to 50gr

/per cheese & per person

Cheese only - Dinner cocktail:

125 to 175gr

/per person


How long can I keep it?

With the appropriate condition you can keep most of the cheeses for about two weeks or more depending of its type. Our cheeses are coming wrapped in a special paper that helps its conservation. We recommend that you keep your cheese in the fridge wrapped in this paper.

 

 How should I eat cheese?

To enjoy the full range of flavor a cheese can offers it is best to let it comes at room temperature before degustation. Then enjoy it on French bread or crackers with or without condiments depending on your preferences.

 

Can I eat the rind?

Almost all of the French cheeses have an edible rind, though it is commonly removed on most of the hard cheese types. For the others cheese types if the rind is too strong to your taste, scrape it lightly or just remove it. This is a true matter of one’s own taste.


What is the difference between a raw milk and pasteurized milk cheese?

Raw milk is unpasteurized milk; in France raw milk cheeses are considered the standard for high quality products even if some good quality cheeses can be made from pasteurized milk.

 

What is a matured cheese?

A matured cheese is one that has been allowed to age in order to enhance its flavor and increase the complexity of its tasting profile. This process requires special conditions, attentions and cares. Here at La Fromagerie we are maturing our cheeses.

 

What is an AOC cheese?

AOC stands for Appellation d’Origine Contrôlée, it can be translated as "controlled designation of origin" and is a certification defined in French laws. It was initiated in 1935 to safeguard the specificity of certain products originating in France’s regions, or terroirs.

Beyond indicating a geographic origin, the AOC designation also focuses on specific criteria such as geological, agronomical and climatic factors, as well as indisputable know-how through consistent and traditional production processes.

The purpose is to protect the reputation of the regional foods, promote rural activity, authentic products and to avoid the misleading of consumers by non-genuine products, which may be of inferior quality.
